Banana Bread
This bread does it all! It is great for breakfast on the go, a snack with some tea, a pre-exercise pick me or something to munch on post exercise to aid a quick recovery and it tastes great too! The ingredients are simple and throwing it together is a cinch. However, don’t mistake this for lacking in nutrition. Just to touch on some of the health benefits; you have Bananas to provide potassium, help calm ulcers, improve digestion, promote kidney health and build strong bones. Dates are a good source of iron, B6, potassium, fiber, calcium, magnesium, are anti-inflammatory and promote eye health. Coconut (while there is still some controversy on this in the world of nutrition because of it’s high saturated fat levels) provides fiber and a rich creamy flavor and folate.
Ingredients
1 cup oat flour
5 dates minced
1/2 cup flax meal
1/2 cup dried shredded coconut flakes
1/2 tsp salt
3/4 tsp. baking powder
2 large bananas smashed
1 tsp vanilla
1/4 cup unsweetened almond milk
Directions
Pre heat oven to 180 °С. Remove peel, place in bowl and mash the bananas with a fork. Add in vanilla, dates and almond milk and stir until well combined. In a separate bowl mix together all dry ingredients: oat flour, flax meal, coconut, salt and baking powder. Slowly add dry ingredients to wet ingredients while stirring. Mix well until everything is coated. Lightly oil a bread pan with coconut oil and spoon mixture into pan. Smooth the top with a spatula and place in the oven. Bake for 30 minutes.
Let cool on a cooling rack – then sit down and enjoy a slice!
